As part of our continuous pursuit of quality and innovation, we recently explored a fascinating phenomenon that highlights the important roles of roasting, storage, and chemistry in shaping the coffee experience.

Preserving Freshness and Quality

Freshness is one of the foundations of exceptional coffee. When roasted coffee beans are exposed to air, moisture, light, or heat, they gradually lose their aroma and flavor complexity. Proper storage plays a crucial role in preserving quality.
Simple practices such as storing coffee in an airtight container, keeping it in a cool place, and protecting it from direct sunlight can help maintain freshness and ensure a consistently enjoyable cup.

An Unexpected Discovery

During routine quality inspections of one of our coffee lots, we noticed an unusual formation on the surface of several roasted beans. At first glance, it appeared similar to mold, raising immediate concerns. However, closer examination revealed something entirely different.
Through careful analysis, we confirmed that the mysterious substance was not microbial growth. Instead, it consisted of crystalline formations—a rare and fascinating result of chemical changes occurring during roasting and storage.

The Role of Roasting

Our observations showed that darker roasted coffees, which spend more time in the roasting process, tended to develop more visible caffeine crystals. During extended roasting, coffee oils migrate toward the bean surface, creating conditions that may encourage crystal formation.
Interestingly, even some medium-roasted coffees displayed small crystalline deposits, suggesting that this phenomenon can begin earlier than previously expected and may continue to develop during storage.
While these crystals do not affect coffee safety, studying them provides valuable insight into the complex chemical transformations that occur throughout roasting. Understanding these processes helps us refine our approach to roasting and deepen our appreciation for the remarkable journey from green bean to finished cup.
